240g dry quinoa
150g high-quality dark chocolate, chopped
100g almonds, chopped
Line a large baking sheet with parchment paper or foil and set aside.
Add the quinoa to a large frying pan in a single layer (or do a couple of batches to ensure single layer) over medium heat until the it becomes fragrant and pops and turns golden, which is approx for 5-6 minutes
Melt the dark chocolate by placing rhe chopped dark chocolate in a microwave-safe bowl. Microwave in 30-second intervals, thoroughly stirring the chocolate between each interval, until melted completely.
Pour the dark chocolate into the quinoa and mix.
Top with chopped almonds
Allow the bark to set in the fridge for 20 minutes, or until firm.
Break apart into large pieces and enjoy! Bark will keep for up to a month or two – but it might not last that long!
